Disca, Mexican Fish Taco Fryer

Disca

In my previous article on fish tacos I mentioned using a “Disca” but failed to give any information on what a Disca is or where you might purchase one.
A Disca is a Mexican pan for frying fish tacos or for that matter any other battered sea critter. It looks like one of those VW moon hubcaps except it has wide rim, It is remarkably efficient as you need very little oil, you just fry in the well and drain the pieces on the rim, which also keeps everything nice and warm, Brilliant!
I have not found any online sources to purchase one. so your best bet would be any cooking supply store in Baja or you might luck out and find one in a Latin market north of the border. If you happen to be fortunate enough to come across one of these little treasures grab it. You can use it for all kinds of other things besides fish tacos. Using a Disca for French Fries is fantastic because you can fry once then drain on sides then re-fry a second time for those perfect “pommes frites”. It is also a great conversation piece for your next outdoor get together just place on one of those round turkey fryer burners and cook away!

    TURKEY FRYER BURNERS? What the hell is a turkey fryer burner? I am imagining the burners designed for a wok, because that seems like it would fit what you’re describing otherwise, but… turkey fryer??

    Ok, captured my attention. The “Disca” has become a subject of interest in my office and since we live and work in San Diego we are at witts end trying to locate a place to buy one of these. So all you food fans out there - where does one find one of these?

    Hello!
    I’m mexican, and the Disca is not only for Fish, actually is one of the main tools for a vast variety of mexican food.
    If you ever go to the Distrito Federal (DF) you can see in almost every corner, lovely ladies selling:
    Gorditas, Quesadillas, Huaraches etc, all deep fried in the Disca. One of my favorite fish dishes are the “Mojarras Fritas” fish, with a light coat of flour, deep fried in them, with Salsa, Lemon and Tortilla, simply delicious!!!

    Found them and glad I did. Really simple effort - In Escondido at the newly renovated Northgate Market (”Gonzalez”) they are perfect size for a mere $4.99 and you might ask…. they are called Comal Hondo in the store. They are just like the one pictures above. They also have a larger variety with a burner and stand for a tad more……

    Time to prepare the fire!
