In my previous article on fish tacos I mentioned using a “Disca” but failed to give any information on what a Disca is or where you might purchase one.
A Disca is a Mexican pan for frying fish tacos or for that matter any other battered sea critter. It looks like one of those VW moon hubcaps except it has wide rim, It is remarkably efficient as you need very little oil, you just fry in the well and drain the pieces on the rim, which also keeps everything nice and warm, Brilliant!
I have not found any online sources to purchase one. so your best bet would be any cooking supply store in Baja or you might luck out and find one in a Latin market north of the border. If you happen to be fortunate enough to come across one of these little treasures grab it. You can use it for all kinds of other things besides fish tacos. Using a Disca for French Fries is fantastic because you can fry once then drain on sides then re-fry a second time for those perfect “pommes frites”. It is also a great conversation piece for your next outdoor get together just place on one of those round turkey fryer burners and cook away!
